Dinner Dilemmas

I love to cook, so it is always a dilemma about what I am going to eat for dinner.  There are so many recipes and so little time!  However, whenever I am stymied about what I should make, I always turn to my trusty boneless chicken breasts, which form the basis for many of my dinner meals.  Most recently I decided to try a version of Chicken Piccata, a delicious and lemony flavored dish that includes just a splash of wine, artichokes, capers and mushrooms.  Chicken Piccata is a ridiculously easy dish to prepare, but when you serve it with some fluffy rice pilaf and a side of asparagus, it looks like haute cuisine and tastes even better. So that’s how I solved my dinner dilemma.
